Your tour begins at the Plaza del Arenal, a central point where you meet your guide. After a brief introduction, walk the historic center of Jerez, as your guide begins to explain the fascinating history of the Andalusia and its unique culinary culture, including the origins of the Andalusian dishes.

On your culinary journey, visit two bars typical of the city and savor a tapa at each site. You also won’t want to miss a glass of the famous sherry. Specific dishes vary depending on the day and season, but some examples include ajo caliente (hot garlic), la cola de toro (oxtail stew), el puchero (garbanzo stew), los chicharrones (pork rinds), la berza (cabbage), los alcauciles (Arabic Word for alcachofas, or artichokes) and the well-known riñones al jerez (kidney in sherry sauce). These ingredients can be more commonly found in bygone days, many times governed by the shortages of products. Learn about how these dishes vary from town to town. For example, in Chiclana, chicharrones are more like carne mechada, a stuffed roll of tenderloin, and are served in fine slices.

In many of recipes, wine cannot be left out as an ingredient. It is available in so many varieties, and there is usually an ideal type for each recipe, making it an indispensable part of Jerez’ gastronomy. The unique show, "How the Andalusian Horses Dance", is an equestrian ballet accompanied by quintessential Spanish music and 18th century styled costumes, all put together and choreographed using movements based upon Classical Dressage, Doma Vaquera (country-style riding) and traditional equestrian chores.

Each show consists of between six and eight different choreographies, with the same degree of difficulty and entertainment value and scheduled by the school according to the following repertoire;

Doma Vaquera; a demonstration of the skills of this Spanish riding discipline based on traditional cattle herding. The horseman rides his horse around the arena using only one hand, first trotting and later galloping: Changing the rhythm and then performing pirouettes and arreones (breaking into a gallop) ... Work in hand; The horse also obeys its rider even when the horseman is not in the saddle by carrying out classical Haute École dressage exercises such as levades, caprioles, courbettes, piaffe (between pillars), the Spanish walk and long reins.

Carrousel; A group of horses and riders, in unison, perform advanced equestrian exercises in the arena to provide a most fitting end to the performance.

Ainhoa Arteta is a is a Spanish classical and crossover soprano, 

After winning the Metropolitan Opera National Council Auditions in 1993, she debuted at the Metropolitan Opera House in October 1994 as Mimì in La Bohème. Further Met performances include rôles as Violetta in La Traviata, the Countess Olga Sukarev in Giordano's Fedora with Plácido Domingo and Mirella Freni, Micaela in Carmen, Musetta in Bohème and Thérèse/The Fortuneteller in Poulenc's Les mamelles de Tirésias conducted by Levine.

Her first London performance was in 1999 at a concert with Plácido Domingo at the Barbican Hall organized by the Royal Opera House, Covent Garden. Her first performance at Covent Garden was in 2002 when she sang Musetta with Ramón Vargas as Rodolfo and Cristina Gallardo-Domâs as Mimì.

Her first appearance at New York’s Carnegie Hall was with Dolora Zajick and Plácido Domingo, with whom she works regularly with concert performances in several countries including Spain, the United States, Brazil, France, Turkey, England, Germany, Austria and Lebanon.
